- 1 package extra lean ground turkey
- 2 medium sized tomatoes
- 1/2 of a large white onion or 1 small onion
- 1 tsp minced garlic
- 2-3 jalapenos
- 1 can of diced tomatoes south western style
- 1 can low sodium black beans
- diced mushrooms
- 1 package of chili seasoning ( the kind I use is called Senor Gordons and the only place my family can find it is in colorado so if you live there you are very lucky!)
- Brown the turkey meat and add the chili seasoning
- In a separate pot add 1 tbs of olive oil and the onion diced up to brown
- Add the tsp of garlic
- Let brown for about 5 min
- Add the jalapenos
- Slice up the two whole tomatoes ( I like mine to be kind of big chunks)
- Add the tomatoes to the simmering mixture
- Add the can of south western style tomatoes as well as the can of beans
- Let simmer for another 5 min
- Add the browned meat to the pot
- Add a can of water
- Let simmer for 1 hour on low
I love this chili and I make it all the time! I like to only eat about 1/2 a cup at a time over a mixture of romaine and spinach and then add a dollop of greek yogurt (sour cream ; ) ) and some avocado
