Egg White Spinach "Muffins":
This recipe is super simple and awesome for a breakfast on the go or a snack!
Ingredients:
- 18 egg whites
- 2 handfulls of spinach
- Several shakes of Mrs. Dash seasoning
Directions:
- Crack all the eggs into a large bowl
- Take 2 big handfuls of spinach and put it in the food processor until the spinach is in tiny pieces (you can try to cut it if you don't have a food processor)
- Add the spinach to the bowl of egg whites
- Add the Mrs. Dash seasoning of your choice and stir the egg and spinach mixture
- Heat the oven to 350
- Spray muffin tins with Pam cooking spray
- Pour the egg white mixture into the tins
- Bake for 25-30min
- Let cool for about 20 min before sliding them out
Flat Bread Pizza:
Marrying into an Italian family one of the first things I learned to make was home made sauce! Mmm Robbie loves when I make my sauce :)
Ingredients for sauce (this makes a large pot):
- 1 tbs. Olive Oil
- 2 tsp minced garlic
- 1/2 of a chopped white onion
- 1 tsp red pepper flakes
- 1.5 cups fat free & reduced sodium chicken broth
- 1 large can crushed tomatoes
- 1 small and 1 medium can tomato paste
- 1/2 cup water
- 2 tsp fresh ground black pepper
- 1 tsp sea salt
- 1 tsp oregano
- 1 tsp rosemary
- 1 tsp basil
- 1 small handful of reduced fat mozzarella cheese
Directions:
- In a large pot add the olive oil on medium heat along with the garlic- 2 minutes
- Add the diced onion and cook until translucent
- Add the crushed red pepper
- Add the chicken broth and then the tomato paste- stir all together let simmer for 5 min on low
- Add the crushed tomatoes and water- let simmer for 5 min
- Add all the additional spices- stir thoroughly
- Put the lid on the pot and let simmer for 30 min
- Add the cheese and stir- allow to simmer for another 30 min
I wanted my sauce thicker since I knew it would be on a pizza. Also, play with the spices. If you want more oregano- add it! Taste the sauce as it simmers. If it is too sweet add a bit more salt and if it's too salty add a little bit of stevia to sweeten it up. I usually add stevia but because the garlic I used was fairly sweet I did not need it. Making the perfect sauce takes time and experimentation. I don't even measure my ingredients anymore because I just know what to add and how I want it to taste.
Flat Bread Pizza:
Ingredients:
- Flat Out wraps
- Sauce
- Extra Lean Ground Turkey
- Reduce fat Mozzarella cheese
- Spinach
- Additional veggies of your choice
Directions:
- Brown the extra lean ground turkey
- Take the flat out wrap and add a generous amount of sauce
- Sprinkle the top with cheese
- Add the ground turkey and veggies
- Heat the grill on high for 5 min and then lower the heat
- Spray the grill with Pam cooking spray and place the pizzas on the grill
- Cook until slightly crispy and the cheese is all melty (you can use the oven to cook these as well- 350 until crispy and melty cheese)
- ENJOY!
OH MY GOSH these pizzas were delicious! I didn't miss all the extra carbs and fat what-so-ever! Robbie added mushrooms to his pizza and I just opted for the spinach. We have tons of sauce let over and I will either freeze it or think of other things to use it for this week.
My niece, Marie, was over so we made her some too and she loved it! This is a great healthy meal for the whole family : )
Just out of curiosity, when making the egg white spinach muffins, how many should I end up with? It seems that if I made 18 individual portions it would be way small. Thoughts?
