Instead of making traditional tacos I made Southwest turkey meatballs with a dipping sauce and cilantro lime rice! It was super easy and really tasty. I hope you enjoy!
What you will need:
- 1 lb of lean ground turkey (I am sure beef or chicken will work too)
- 1 packet reduced sodium taco seasoning
- 1/2 a can of black beans
- 1/2 a can of Rotel tomatoes
- 1/2 c oats
- Finely chopped cilantro to taste
- Juice of one lime
- Southwest seasoning (optional)
For the dipping sauce:
- 1 tablespoon plain greek yogurt
- Desired hot sauce to taste (I used Texas Pete's)
Directions:
-Combine all of the meatball ingredients into a large bowl and mix thoroughly with your hands. It just works best to do it this way. Make sure the seasoning is evenly mixed. Roll the mixture into medium sized balls and place onto a baking sheet sprayed with non-stick spray. Heat the over to 420 degrees. Cook for 35 minutes or until they are brown and done. I have a gas Italian oven so things tend to cook faster in it.
-Mix the cooked rice while hot with the desired amount of cilantro, lime juice and spices.
-Dipping sauce is also made to your tastes. I love using greek yogurt because it tastes just like sour cream to me when it's unsweetened.
Hey, I didn't say this was going to be complicated! It is a simple recipe with loads of flavor. I know especially in the Summer I don't want to spend a ton of time in the kitchen cooking when I am already hot. This gives you a fast dinner option that provides left overs for lunch the next day.
