It's times like these when life happens that I am so happy that I precooked my lunch and portioned it out the night before. I hurriedly grabbed my food for the day and packed my oats and a protein shake for an easy breakfast I'd have to make at work.
A morning like this could ruin your whole day if you let it. I chose to not let it get to me or allow it to give me excuses for poor decisions the rest of the day. I have often used the excuses in the past of: "this is a bad day so I need a treat" or "I didn't do my morning cardio so I might as well not work out later either." It happens to us all but life is just a series of decisions so if you chose to make a bad one it doesn't mean the rest of your day can't be filled with the right choices. Basically, it's never too late to start over. Get up and dust yourself off.
I eat my breakfast at work followed by the rest of my meals, drank my gallon of water, and went and worked out right after work. I feel quite accomplished after what could have been a bad Monday!
Anyways, this weekend I tried a few different recipes and really like them both. Last week Robbie's parents were eating a Waldorf salad from the grocery store deli and it had me thinking of how I could make a healthier version.
Here it is:
Ingredients:
1 sliced celery stalk
1/2 cup of sliced red grapes
1 chopped green apple
1 chopped honey crisp apple
1 small package chopped walnuts
1 &1/2 cups 0% plain greek yogurt
1 packet stevia
2 tsp black pepper
2 tsp sea salt
the juice of 1 lemon slice
Directions:
Combine all the sliced fruit and celery in a large mixing bowl. In a separate bowl whisk the yogurt until super creamy. Add the stevia, pepper, salt and lemon juice to the yogurt and whisk well. Fold the yogurt mixture into the mixing bowl. Finally, mix the walnuts in.
This is a great Summer snack!
I also tried The Gracious Pantry's recipe for Sweet and Sour Meatballs and they turned out awesome! I did half extra lean turkey and half extra lean ground beef.
