I am known to always have a packet of ranch in the pantry for those "oh crap, what are we having for dinner" moments. We make so many different variations of meats with just a packet of ranch. So easy and good. This recipe is great because it's only a few ingredients that you probably already have on hand! Plus, who doesn't love bacon and ranch?!
Ingredients:
- 3 boneless skinless chicken breasts
- salt and pepper to taste
- 1 packet of ranch seasoning (more if you like it really seasoned)
- 1 package of low fat cream cheese softened
- 1/4 cup milk (I used unsweetened almond milk)
- 1 bag of frozen broccoli
- 6 slices of bacon chopped
- 1 box of bow tie pasta (or pasta of choice)
Directions:
- I like to use a crock pot liner because it makes clean up a lot easier. Throw the chicken in the crock pot with a little bit of water- just enough that it won't stick to the pot.
- Add salt and pepper to taste. Set on low for 6 hours or high for 3. You want the chicken to easily shred up, so whenever it gets to that point go ahead and drain the liquid from the pot.
- Shred the chicken and add in the packet of ranch and thoroughly cover the chicken with the seasoning.
- Throw in the frozen broccoli and continue to let cook on low. In the mean time you will put your softened cream cheese into a bowl with the milk and mix it up. Once it is pretty thin you will add it to the crock pot and thoroughly cover all the contents in the pot and cover.
- Fry up your bacon and chop it up and add it in.
- Boil your pasta until tender and drain.
- Add the pasta to the crock pot and thoroughly mix it all up.
- Enjoy!
You're sure to have left overs which is a double win in mom world ;)
