Italian Style Chicken:
Ingredients:
- 4-6 Large Chicken Breasts
- 1 large can of crushed or chopped tomatoes (no salt added)
- 1 large can of Italian style tomatoes with the seasoning (no salt added)
- 1 can tomato paste (no salt added)
- 1 tsp oregano
- 1 tsp rosemary
- 1 tsp parsley
- 1 tsp garlic or garlic powder
- 1 tsp onion powder
- 1 tsp sea salt
- OPTIONAL: a little stevia for a sweeter sauce
Directions:
- Throw the chicken breasts into the crock pot (I like to put mine in partially defrosted so that it creates a little extra liquid while cooking)
- Add the cans of tomatoes and paste right on top
- Mix all the seasonings into a little dish
- Sprinkle the seasoning all on top of the chicken and tomatoes
- Set on high and cover
- Chicken should shred apart when it's done cooking
I sliced up zucchini into thin slices for "noodles". I love the combo of zucchini with spaghetti sauce. I need to get one of those tools that slices it more noodle like, because mine was more like long skinny chunks but it got the job done. Lunch was delicious!
I am trying to ditch grain this week to see how my body likes it. I have been having sweet potatoes with breakfast instead of oats, and although I miss my oats I felt like my stomach was flatter today! I will let you all know how I feel at the end of the week with no grains.
Well, my bed is calling my name! Just devoured some casein pudding w a tsp of PB...mmmm :)
