Cinnamon Roll Protein Pancakes with Cinnamon Roll Glaze:
Pancakes- ingredients:
1/4 c quick oats
1/2 c wheat bran
1/2 scoop cinnamon roll protein powder (I used the Gaspari brand)
1 tsp baking powder
2 packets stevia
1 tablespoon Greek yogurt
1/2 tsp butter extract
1 tsp cinnamon
4 egg whites
1 whole egg
Directions:
In a medium mixing bowl add the oats and enough hot water to moisten them and half way cook them. Add all the other ingredients into the bowl adding the eggs last. Mix with a whisk until the mixture turns into a thick batter.
Spray a medium pan with non stick cooking spray and put on medium heat.
Batter should make 3 medium pancakes.
Glaze:
1/2 a scoop cinnamon protein powder. Add a little water and whisk until it's thick but runny enough to spread. Will seem like real glaze consistency.
After you cook the pancakes add the glaze to the top of them. I finished mine off with some sugar free pancake syrup. It was delicious!
